Continued demand for protein and fibre-rich products has led to the introduction of a new range of pulse products from cereal processor Silvery Tweed Cereals.
The new range, which launches this month, includes products such as fava bean flakes, kibbled red lentils and chickpea flour.
NPD Manager Julie Telfer says the new products have been developed for use in both cereal and bakery products, and tie into current trends for protein and fibre claims. “Pulses are healthy and nutritious, and they’re gaining popularity as people become more familiar with them as natural sources of protein and fibre. They can be used as a main ingredient or as a substitute ingredient in cooking and baking, and they are also a natural source of magnesium,” she says.
“Pulses have broader environmental benefits, too. They use less water in the growing process than traditional crops and remove carbon dioxide from the air, often making them carbon negative. They also absorb and recycle other toxins”
The Silvery Tweed range includes fava bean products, also known as faba beans, horse beans or field beans. Fava bean flour is naturally milled and can be used in baked goods to increase protein levels. Fava bean flakes can be used in breads and other baked goods, or to add a nutty flavour to granolas, cereal bars, trail mixes and biscuits.
The range also includes kibbled red lentils, which Julie says are ideal for adding to bread, baked goods and cereals; and chickpea flour, which is iron-rich as well as being high in protein and fibre.
The final product in the range is haricot bean flour, which has a mild, delicate, nutty flavour and is a good source of protein, fibre, iron, and magnesium. It is suitable for a variety of uses, including bread and baked goods, where it can be added to increase their nutritional content
